Salmon/Broccoli Bake



Salmon/Broccoli Bake


(easy and delicious..healthy too)


4 eggs (beat in 4 qt bowl with large fork)

add

1 cup whole milk

1 cup Half and half


Clean one can of Demings red Salmon

(don't use water or skin)


Add salmon to milk/egg mixture


Add one package Birds Eye frozen broccoli

(no... don't thaw it first)


Add one package Kraft Stove Top Stuffing

(savory herb)


Mix well and place in (buttered) Large glass oblong baking dish.


Add black pepper and crumbled cheeze-its if desired.


Bake at 350ยบ for one hour.

My Secret Fresh Tomato Chili Recipe



My Secret Fresh Tomato Chili Recipe


Thoroughly brown 2 Pounds Ground round or sirloin in Olive oil and butter.

(1/4 Cup Olive oil and 3 TBLSP Butter)


Chop up 30 medium tomatoes in Ninja chopper

Chop up two large onions and add to the browned meat in

a large pan. (at least a 4 quart size)

Add three cans Bush's red kidney beans (blend two of them in blender)

Add six Tablespoons chili powder

1 teaspoon cayenne pepper or one Tablespoon of Red pepper tincture.

Large pinch of basil.

1/2 cup white sugar.

2 teaspoons salt

Optional additions below:

(I use all of them)

1 Tablespoon dry poppy seeds

1 Tablespoon Chia seeds

1/2 cup Sunflower nuts

4 Tablespoons Sesame seeds

1 Tablespoon dried garlic powder

1/2 cup dried Parsley

1/2 cup dried chives

1/4 cup Cilantro

2 Teaspoons chervil


Mix and boil until bubbly



Happy Eating


Serve with hot biscuits or Chedder/parmesan cheez-its!

'Bandy the Elf'



'Bandy the Elf'

A little elf named Bandy lived in a big hollowed out tree
He nestled in and felt safe.
His only friends were six little bugs.
Charlie, Chancy, Carlos, Carper, Chio and Chad.
They were always having fun.
Then one day, in flew a big Lady Bug.
She was carrying a strange thing that looked like a branch.
She came in and looked around.
She said, "This place is disgusting"
It needs to be cleaned up!"
Bandy and his friends looked at each other in wonder.
She waved the branch around and suddenly everything
inside of the tree was sparkling clean.
She waved it again and they smelled something good cooking
in the oven of their black stove.
The Lady bug told Bandy to take it out and put it on the table.
It was a delicious apple pie.
It was bubbling hot.
She invited them to sit d own and enjoy it.
So they did.
Mmm it was so delicious.
She looked around and waved the stick again.
Six little beds appeared.
The bugs had always slept with Bandy but now
they had their own beds. They were really cute little beds.
The lady bug said, You must be bored living in the woods.
She waved the stick again and suddenly near the edge of the
woods appeared a giant Mall. She swooshed it once more and
they were all in the Mall, astonished to see so many people!
The people were shopping and had strange hypnotic looks in
their eyes. They bumped into each other with all of their packages.
The Lady Bug smiled with satisfaction. The bugs climbed up
Bandy's arm and sat on his shoulder. They were terrified.
So was Bandy. He went to the edge of the wide space and started
running as fast as he could. People nearly stepped on him. He
just kept running. He ran out the door and through the parking lot,
into the woods until he was home in his hollow tree.
He locked the door behind him. The bugs were breathing hard too
but were so glad to be home. The remains of the pie was still on the
table but they just wanted to rest.
They all climbed as near as they could get to Bandy's neck, still quivering
from their experience.
They fell asleep..
Bandy and the bugs finished the pie the next morning
They kept their house clean hoping the Lady bug would never come back.
She never did.

Moral: Keep your house clean or you might end up at the Mall.

Cooking Fail


Cooking Fail

OK...I seldom make an error in cooking as I have
been cooking since I was five...That was 72 years
ago.
Today I was going to make my favorite chocolate
chip cookies. Usually I use room temperature butter
but since I was in a hurry and I hadn't remembered to
take it out, I melted two sticks in a pan. Forgot to
turn the fire off and I had some red hot butter but it
hadn't scorched. (first miracle).
So in order to cool it off, I decided to add the white and the brown
sugar to it. Hmmm...that wasn't a good idea as it kinda crystallized.
Ok...moving forward I mixed the two eggs, salt, baking powder and
soda and vanilla in another bowl. (I never follow mixing directions)
By then, the butter had cooled pretty much so I added it to the egg mixture.
Then I added 3 cups of oatmeal flour. Oh boy...the batter didn't look right.
I added one cup of white flour and the batter still didn't look right so I added
an extra cup of oatmeal flour. Now it was really hard to mix but I persevered
and added the chocolate and pecans. I was thinking I was wasting a lot of
expensive ingredients. The cookies looked very shiny...(greasy) but I popped
them into the oven for 16 minutes.
VIOLA...they turned out better than ever. Can you believe it?

Lesson....never give up until the "fat lady BAKES"
