Swedish Potato Flat Bread Recipe
(my Mom's recipe)
(Two Loaves)
Make and set aside..
2 tsp sugar
2 tsp yeast
1/2 cup warm water
Boil 4 medium potatoes in salted water..
just enough to cover.
Mash pot and add water to make two cups total.
Make sure this is just lukewarm
so it won't kill the yeast.
In Bowl put potato water...the yeast mix
1 TBLSP salt 1/4 cup sugar...
1/4 cup soft butter
Three cups of flour...mix and
add 2 1/2 to 3 more cups of flour slowly
until dough feels "alive"!
Knead....rise...knead...flatten...shape two loaves
(kinda round and flat.....
let rise a little..then poke
about six holes in it with a finger
from each hand.....
stretching two fingers outward
to make fairly large holes.
Toss some flour on cookie sheet
Place loaves on flour and bake 350º
for 35 min or until nice and brown...
Sometimes I bake them at 375º
Cool on rack...slice while hot and butter ...enjoy.
